Garlic Potato

Ingredients :

4/ 5 potatoes
1/2 cup of mayonnaise
1 tea spoon of garlic
1/2 teaspoon white pepper
Cheddar cheese
Oil for frying
Olive oil for rubbing the potatoes before baking
Italian seasoning (optional)

Procedure:

1. Wash the potatoes very well . Don’t peel . Now make several crosswise cuts into it making sure not to slice the potato completely .

2. Rub some olive oil over the potatoes and bake @ 450 FH for 45 minutes .

3. Deep fry it until crunchy . Let it cool.

4. Make a mixture of mayonnaise and garlic and white pepper . You can add little sugar in it too to sharpen the taste . Now put the mixture into every slits of the potato . Put some cheddar cheese too. Sprinkle some Italian seasoning over the potatoes .Now bake again in a pre-heated oven for 15 minutes at 400 FH .

Meatball stuffed Potato ball

Well , this recipe is another production of my ” too many idea filled brain” !!! 😀 Can be a very good side dish or snack !!!! Great in Kid’s lunch pack too !!!!!

Ingredients:

For meatball:

1. Grounded beef 350 gram ( raw)
2. Ginger-garlic paste 1 teaspoon
3. Soy sauce 1 teaspoon.
3. 1 beaten egg.
4. Cornstarch : enough to be able to shape the meatballs.
5. Salt to taste
6. Chopped green chilies, cilantro, mint
7. A pinch of garam masala powder.

For potato balls:

1. 3 large potato , boiled
2. Frid onion , 1/4th cup
3. Chopped mint and green chilies
4. Salt to taste

For coating :

1. One beaten egg
2. Bread crumbs and rice flour ( half n half )

Other ingredients:

Oil , enough to deep fry

Cooking Method:

1. Combine all the ingredients of meatball together and make small balls out of them .

2. Mash potato and mix with the ingredients mentioned for potato ball .

3. Take some mashed potato and put one meatball inside it . Reshape into a ball .

4. Dip in beaten egg and coat with breadcrumb-rice flour mixture.

5. Deep fry on medium-low heat . Don’t turn over until the other side is reddish brown . Fry both side well . Ready !!!!!

Notes:

1. You don’t need to fry the meatballs before . Just use them raw inside the potato balls and they will be cooked too with the potato .

2. Don’t try to turn over the other side while frying , you may end up with broken potato balls . Have patience and fry each side minimum 5/6 minutes before you turn over . Let it get that brown color before u turn over .

3. If you want to cut the potato balls after frying , let tit cool first , then cut .Or else you may ruin the potato balls ..

Ingredients:

Baby potatos / potatos, boiled 1 lb
Tamarind juice ( thin) half cup
Jaggery/ akher gur 1 and half tbl spoon or according to your taste
Chili powder half a teaspoon
Salt to taste
Food color ( optional)
Oil
Curry patta
Ginger paste 1 and half teaspoon
Garam masala powder half teaspoon
Achari masala 1 tbl spoon

For the achari masala , dry roast 2 teaspoon cumin , 2 tea spoon whole coriander , half a teaspoon Indian 5 spice ( paanchforon), half a teaspoon fennel seed ( sauf) and 4 dry chilies. Grind them into a smooth powder .

Cooking Method:

1. Peel the boiled potatoes and rub little food color and salt .

2. In a bowl, take tamarind juice, jaggery , salt, chili powder, achari masala and garam masala powder . Mix well.

2. Heat oil in a wok and add the potatoes . Cover the lid and cook on medium low flame stirring occasionally. Add the curry leaves.Add the ginger paste, stir and fry a little while. Now add the tamarind mixture and cook until the gravy almost dried out . Add some green chilies and cover the lid . Reduce the heat on very low flame , that’s what we call to keep on “dom” . Keep the Wok on that flame for atleast 5 minutes or until the oil separates.

Ready!!!!!!!!

Notes:

1. You may alwayz adjust suagar and salt depending on your taste. Likewise you may add a little extra achari mashla while adjusting the taste.

2. You may add 1 teaspoon of mustard oil at the end of cooking and name it ACHARI ALOO too !!!!!!!! 😀

Ingredients:

1. 2 slices of White bread or any bread of your choice

2. Potato 1 medium , boiled and mashed

3. Butter 1 tblspoon

4. Mayonnaise 1 teaspoon

5. Crushed black pepper Half teaspoon

6. onion, chopped 1 teaspoon

7. Chopped green chilies and cilantro

8. Chopped bell peppers

9. Cream Cheese ( optional)

10. Cucumber

11. Salt to taste

Cooking Method:

1. In a bowl mix butter, mayonnaise, crushed black pepper, onion, green chilies, cilantro, bell peppers, cream cheese, salt with mashed potato.

2. Spread the potato mixture on one slice of bread evenly. Put the slices of cucumber over it.

3. Cover this slice of bread with the other one. Brush little butter over it (over the sandwich). It will make your sandwich a bit more crispy.

4. Now put this in your sandwich maker and toast/grill it until crispy.

5. Serve hot.
